    You are supposed to let it rest longer aren’t you? From my understanding shredding to early impacts it later?

  2. ugh, man let that sit and rest an hour or two so it’s not dry like chopped up leather jerky. However long it’s been sitting out isn’t long enough if it’s still that hot.

    Side note, don’t give those bones to your dog. My wife did that last time I smoked a pork butt and he was a mess for over a week. Will spare you the details.

    Also not scoring the fat cap is an indication of the pork being done. When it’s starts to crack naturally you’re making progress but you know that already I assume lol.
