A national burrito chain will spice up the Lehigh Valley when it opens a new restaurant later this month in the region.
Bubbakoo’s Burritos will open at 1892 Leithsville Road in Lower Saucon Township, Marketing Director Ben Grannick said, a slight delay from the original July opening and change of address from 1882 Leithsville Road.
The restaurant will serve the titular burritos as well as birria tacos, quesadillas, bowls, taco salads, chicken tenders, loaded fries and miniature churros.
It would be the Lehigh Valley area’s second location, after Bubbakoo’s opened the region’s first location in 2021 in Richland Township.
Paul Altero and Bill Hart founded the chain in 2008 in New Jersey, its website said. It has since expanded with locations in 17 states.
