I made the Garlic and Oil Classic, Shrimp Diavolo, and one of my personal favorites — an anchovy pasta dish that you’ll be surprised how good it is. Plus, we’re saving the Xenia special for later!

Buy good imported dry pasta, use quality seafood to make your own pomodoro sauce — don’t open a jar. Cut fresh herbs from the garden and use the garlic oil you toasted the cloves in. Try something new and innovative — you might just find out that you like it a lot!

*Shrimp Diavola*
• 12 oz Gemelli pasta
• 2 tbsp olive oil
• Shallots, finely diced
• 3 cloves garlic, minced
• 5 peeled and deveined U12 shrimp (or equivalent)
• 1/4 tsp crushed red pepper flakes (medium heat) (add more pepper flakes and some hot sauce for more heat)

• 6 oz Pomodoro sauce

• white wine
• unsalted butter
• Salt
• Black pepper, fresh ground
• Italian parsley, for garnish

*Garlic Infused Olive Oil Prep*
• 1/2 in olive oil in stock pot
• Whole garlic cloves (peeled)
| Heat oil
| Add garlic, swirl until light brown
| Strain, save oil & garlic

• Pomodoro sauce (optional)

*Anchovy Garlic and Oil Pasta*
• 12 oz imported gemelli or other firm pasta
• 2 tbsp garlic infused olive oil
• garlic cloves, minced
• Shallot, finely chopped
• 5 anchovy fillets
• 2 oz white wine
• Unsalted butter
• Garlic cloves, browned in oil
• Pomodoro sauce
• Fresh herbs like parsley and thyme to taste
• Parmesano Reggiano

*Xenia Special (Light Summer Dish)*
• 1 lb imported Italian pasta (e.g., spaghetti or penne)
• Garlic infused olive oil
• Garlic cloves, lightly browned
• Fresh garlic, minced
• Shallot, finely diced
• Red Pepper flakes
• Salt and freshly ground black pepper to taste
• unsalted butter
• white wine
• Fresh herbs (like parsley or basil), chopped

  1. Very american way of cooking pasta. Also, pre-cooked pasta at home is completely uneccessary. Just cook fresh please. Make your life nicer.
