I want to cook lobster at home for the first time and I'm debating between going with live lobster or just lobster tails. I ordered a package from Maine Lobster Now and it arrived much faster than I expected.
Now comes the hard part: I'm not sure which cooking method to go for. I've read that some people prefer steaming because it keeps the texture better, while others say boiling is easier for beginners. For tails, do you leave them to thaw overnight in the fridge, or is the quick cold-water method good enough?
Also, what seasonings or sauces would you recommend for a first try? I've seen a lot of recipes with clarified butter and lemon, but I'm also tempted to try lobster rolls.

Take it from a Mainer. Steam the about 12 to 15 minutes. Don’t wanna over cook em. If they came packed with seaweed put that in the steamer as well. Don’t forget to taste the tomalley it’s delicious. And lots of melted real butter. Enjoy. I envy you as now I’m in North Carolina and hard to find.
They’re really good grilled if you’re comfortable around your BBQ. Split lengthwise and place meat side down over high heat for 5-6 minutes. Flip, baste with melted garlicky salt & pepper butter and grill for additional 7-8 minutes.
Live lobsters have the best flavor. Frozen lobster tails do not taste the same.
I always steam them for 12 minutes in water and some cajun seasoning (crab boil in Louisiana)
Serve with a lemon, butter, and garlic sauce.
