Might actaully be the worst pack of strips I’ve ever seen.

The ugly end of the strip cut into steaks. Definitely pass on this if you haven’t already bought them. Those are going to be tough as nails.

Just so you know what to look for in the future, there’s a lot of that hard gristle going through those stairs so people are gonna have to cut around that doesn’t matter what you do to the steak. Those are gonna be kind of highways of impossible stuff to chew, and you have to might as well be bone if we’re gonna go high-level. So you really don’t want any steak that has those kind of veins of gristle in it no Bueno.

  4. Ugly strips but this is typically the piece of strip you get on a porterhouse. Hence the reason I wouldn’t pay extra for the porterhouse.

  5. NY strip from the back end. You’re getting some strip and big hunk of sirloin, but paying strip prices. If you like these you can save some money and just buy sirloin steaks.

Strip loin from the back end, also called the vein end. That vein of connective tissue is chewy as hell. Where i live vein steaks are a little cheaper but still more than sirloin. Id just buy sirloin instead of this unless this was cheaper.

Not gonna lie, its been a long time since I’ve seen them cut this far back on a strip. Usually a strip loin ends at the beginning of the short loin but this butcher cut way into it to the point half of these steaks are short loin. Id consider cutting out that vein, it’ll be a much nicer eating steak if you do.
