I freeze a lot of food, especially if I can’t use it in time. And it’s great for easy leftovers.

Today was my day off work and I wanted to clear out some older items out of my freezer.

It never fails, each week there is always 1 over ripe banana that no one will eat. No matter if I buy less there is always 1 left lol. I just toss it in the freezer, peel and all.

It’s time to use up the banana pile! I made 2 loaves of banana bread using 4 bananas in each. I make different variations depending on my mood, today it was traditional. I usually make 2 so I can drop one off at my father in-laws, he will cut it up and freeze it in portions.

The meat in the ziploc bag was 1 pork tenderloin cut in half and separately sealed. A family member was trying to declutter their deep freezer a few months ago and dropped off a couple bag of various foods, this was one of them.

When I saw the tenderloin I realized that I could use the apples from my Flashfood bag (that I got over the weekend and posted this morning about), with it.

I had the pork defrosting in cold water and I prepped the apples and onion that I wound use to cook with it.
When I opened one of the ziplock bags I realized they had cut one of the halves into cubes. It’s fine I’ll still continue what I’m making but I switched to making it in my instant pot instead of cast iron pan.
The picture I included is after I seared the meat but just before I closed the lid. I didn’t get the chance of an after photo.
I made the bag of frozen brussel sprouts as the side.

The jar is frozen compote I made a few months ago. When I made it, It was a mix of fresh berries, rhubarb that I froze months prior and some frozen cherries.
This will be dessert tomorrow over ice cream.

    Banana bread

    1/2 cup melted butter
    1 cup sugar
    2 eggs, beaten
    3-4 bananas, crushed
    1 1/2 cup flour
    1 tsp baking soda
    1/2 tsp salt
    1/2 vanilla

    Pre heat oven 350

    Large bowl cream together butter & sugar
    Add eggs, bananas and vanilla
    Combine well

    Small bowl shift together flour, baking soda and salt.

    Add dry ingredients into to the large bowl with wet ingredients.
    Mix just until combined

    Pour into a loaf pan and bake at 350 for 50-60 minutes.

    Pork tenderloin in instant pot

    2 tbls oil
    1 pork tenderloin
    3 apples, cut up
    1 onion,diced
    1 large clove garlic, minced
    1 cup broth
    1/2 tsp each, salt, pepper, thyme

    Press sauté and heat oil on normal
    Once hot sear all sides of meat and remove. Add onion in pot sauté till soft, add apples and spices sauté few minutes, add minced garlic sauté less than a minute.

    Hit cancel and add both and deglaze the bottom of the pot to get all the bits off. Put meat back in pot and coat it wth the juices in the pot.

    Seal the pot and set pressure cook for only 1 minute. Let it naturally release for 15 minutes.

    Ensure to check meat temp with a meat thermometer after to ensure it’s cooked to temp. I’ve personally never had a problem with temp but I still always check lol.
