Italian-Style Shrimp with Wine Sauce Recipe
1 large onion, sliced
1 Tablespoon garlic cloves, about 3 cloves, minced
1 pound medium shrimp, peeled, deveined
1 teaspoon salt, plus additional as needed
1 teaspoon dried crushed red pepper flakes
3 tablespoons olive oil, plus 1 to 2 tablespoons
1 (14 1/2-ounce) can diced tomatoes
3/4 cup dry white wine, such as chardonnay
1/4 teaspoon dried oregano leaves
1/2 teaspoon Arrowroot, optional
1 tablespoon dried basil
1/2 cup grated Parmigiano-Reggiano
Slice the onion and minced the garlic. Set aside.
In a bowl, combine the shrimp with 1 teaspoon of salt and the crushed red pepper flakes. Toss until evenly coated. Set aside.
Heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp and cook, turning a few times, for 3 to 4 minutes, or until the shrimp are just opaque. Remove the shrimp from the skillet and set aside.
In the same skillet, add the sliced onion. If necessary, add 1 to 2 more tablespoons of olive oil. Sauté for about 4-5 minutes, or until the onion becomes translucent.
Add the garlic, cook, stirring, until fragrant and light golden-brown, about 1 minute
Add the diced tomatoes with their juices, white wine, and oregano. Stir well and bring to a simmer. Cook for approximately 10 minutes, or until the sauce thickens slightly.
Return the shrimp and any accumulated juices to the skillet. Gently toss to coat the shrimp in the sauce. Cook for 1 minute to allow the flavors to meld.
Stir in the dried basil and adjust seasoning with additional salt, if needed.
Top with grated Parmigiano-Reggiano.
