Let’s make some chapos that are inspired by the Moroccan ‘Msemen’ a crispy and flaky pancake (Rghaif) or flatbread that’s made from a combination of Unga wa dola all purpose flour and semolina, my wife loves making chapatis she played a major role here as usual 😍
What you will need:-
3 cups unga wa dola all purpose
1 cup semolina
1/2 tablespoon salt
1 tablespoon ghee
2 tablespoons Buttermilk
2 cups water
1 tablespoon honey
Extra ghee for cooking (melted)
What to do :
In a bowl mix all the ingredients well and knead until you get a soft dough, cover and let it rest for about 30 minutes. Portion into 12 rolls, place them on a tray and cover with clean film for 15 minutes, once rested apply ghee or oil on your hands and flatten the rolls with your hands over a flat surface, keep pulling the dough to make a thin like filo pastry apply some extra ghee on top and sprinkle some semolina, roll and fold to make the layers just like making cinnamon rolls and make your final chapati roll. In a non stick pan over medium heat place the chapati and cook, flip and cook on the other side now add ghee and flip again to add ghee on the other side.
Repeat with the rest of the chapatis. Enjoy with a cup tea or with your favorite curry.
