Cooked at 137 for 32 hours. Seared in wagyu tallow. Made a sauce with mushrooms, garlic, butter, and bag juice.

    Looks really good! Consider cutting the meat against the grain for what most people consider an improved texture, or if you like it that way keep doing your thing!

    Definitely delicious
    But not a fix for Texas BBQ

    Just an fyi wagyu tallow is a bit unnecessary, I’ve had that brand and it’s pretty good but I got normal much cheaper grass fed tallow that was just as good if not a bit better

    Why is the second picture so pink but plated is medium? Flash seared? Hot tallow?

    How much tallow are you using that you have to buy packages? Seems like there’s plenty of fat on most roasts to just trim some and use that as a fat source for searing.
