    3 tbsp butter
    1 medium onion
    3 cloves garlic
    1/2 tsp each salt and pepper
    1/4 cup flour
    5 1/2 cups vegetable or chicken broth
    3 cups broccoli
    1 cup carrots
    8 0z block of Cabot's Extra Sharp Yellow Cheddar, shredded
    1/2 cup heavy cream
    1 – 2 tsp dijon mustard
