Ingredients

For the Marinade:
β€’ 200–250 g paneer (cubed into 1 to 1.5-inch pieces)
β€’ Β½ cup thick yogurt/curd (hung curd preferred)
β€’ 1 tbsp gram flour (besan)
β€’ 1Β½ tsp ginger-garlic paste
β€’ 1 tbsp lemon juice
β€’ Β½ tsp turmeric powder
β€’ Β½ tsp red chili powder (adjust to taste)
β€’ 1 tsp Kashmiri red chili powder (for color)
β€’ Β½ tsp garam masala
β€’ Β½ tsp cumin powder
β€’ Salt to taste
β€’ 1 tbsp oil or mustard oil (adds flavor)

Vegetables (optional but recommended):
β€’ 1 onion (cut into cubes or petals)
β€’ 1 capsicum/bell pepper (cut into cubes)
β€’ 1 tomato (firm, optional, deseeded and cubed)

Instructions

1. In a large bowl, whisk the curd until smooth.
2. Add besan, ginger-garlic paste, all spices, lemon juice, and oil.
3. Mix well into a thick marinade.

1. Add paneer cubes and chopped vegetables.
2. Coat gently so the paneer doesn’t break.
3. Cover and refrigerate for at least 1 hour (or up to 8 hours for best flavor).

Option 1 – Oven:
β€’ Preheat oven to 220Β°C (430Β°F).
β€’ Thread paneer and veggies onto skewers.
β€’ Line a baking tray with foil or parchment, and brush with oil.
β€’ Bake for 10–15 minutes, flipping halfway. Broil/grill for 2–3 minutes for charred edges.

Option 2 – Stovetop (tawa/grill pan):
β€’ Heat 1–2 tbsp oil in a non-stick or grill pan.
β€’ Place paneer and veggies, cook on medium heat until golden and slightly charred, turning sides.

Option 3 – Air Fryer:
β€’ Preheat to 180Β°C (356Β°F).
