I opted for pearl couscous because it’s what I had on hand, and I feel like the bounciness pairs so well with the saucy tofu. But you can also use traditional couscous, which would be just as delicious and make the dish lean more Moroccan. Harissa actually originates in Tunisia but it’s used heavily in Moroccan cooking along with other North African cuisines. It is truly one of those flavour powerhouse ingredients and so fun to experiment with in non-traditional ways, though I do hope to make some traditional Moroccan dishes soon! It’s about time 🫡
