Ingredients (serves 8โ€“10):
1 lb (455g) lentils (green or brown)
ยผ cup olive oil
1 onion, finely chopped
2 carrots, peeled and diced
4 garlic cloves, grated
1 can (15 oz) crushed tomatoes
1 tsp salt
ยฝ tsp black pepper
1 tsp ground cumin
1 tsp crushed oregano
1 bay leaf
Pinch of crushed red pepper flakes
1 lb baby spinach leaves
1 tsp dried dill

To serve:
Feta cheese
Balsamic vinegar or lemon juice
Crusty bread (optional, but highly recommended)

Pre-boil lentils, drain. Sautรฉ onion, carrots, garlic. Add tomatoes, seasonings, and lentils with broth. Simmer 25 min.
Add spinach and dill, cook 5โ€“7 more min. Finish with feta and lemon or vinegar.

  1. This is a very nutritious meal, my mum would always make lentils in a similar way. She didn't add spinach but added some fine noodles crushed. Once it was ready she would add some vinegar to taste.โค

  2. Made this for lunch today. I was really surprised how much flavor it has! It kept calling me back all afternoon. I managed to save some for breakfast. Making cornbread to freeze, after cooks treat. Then banana bread. Hopefully these will help me save the soup for breakfast?!

  3. I cant eat tomatoes. When u make tomatoe sauce recipes, can u also make a different version? Avagolemeno subs well eh?
