One Pan Cheesy Smoked Sausage and Rice Skillet π₯ (Gluten-Free)
You will need:
8 ounces gluten-free smoked sausage
Chopped peppers and onions (optional)
1 C white rice
Cooking oil
1 tsp Cajun seasoning (recipe follows)
1 can of diced tomatoes
1.5 C of chicken broth
1 cup of shredded cheddar cheese (optional)
Slice smoked sausage into rounds; dice an onion and/or bell pepper if desired. Fry sausage and onions in a skillet on medium-high heat with vegetable oil until brown.
Add one teaspoon of cajun seasoning (store bought, if you have a safe gluten-free brand, or make your own. My recipe is below) and 1 cup of white rice. Fry together until the rice is toasted, approximately 3 to 5 minutes. Add one can of diced tomatoes and 1 & 1/2 cups of gluten-free chicken broth. Bring to a boil, then cover and simmer for 15 minutes. Turn off the heat and let it rest for 15 minutes undisturbed.
Simple Cajun Seasoning Recipe:
3 teaspoons paprika
2 teaspoons salt
2 teaspoons garlic powder
1 teaspoon pepper
1 teaspoon onion powder
1 teaspoon oregano
1 teaspoon cayenne

New to cooking here! I'm not sure why but the rice burned at the bottom when I tried simmering it with the broth and such (but the parts I could salvage tasted great lol!)
Should I have stirred occasionally even though the video didn't mention it? π€
My sister also asked if I used enough oil? I don't see why it would matter when the broth is introduced, but maybe the 2 tbsp of vegetable oil wasnt enough?
Or maybe I had the heat on too high or maybe even too low? I had the heat at a 2 on my stove which I thought was enough for a simmer but maybe it didn't bubble enough to keep stuff moving?
