###Instructions
1. Prep and chop all the veg, drain the beans and cook the pasta in very salty water, according to the packet instructions. Measure out the dressing ingredients so you’re good to go.
1. In a large mixing bowl, add the lemon juice, garlic, olive oil, oregano, salt and pepper, then whisk together and season to taste.
1. Add the kale leaves and massage for 2-3 minutes with your hands. You want the leaves to soften. Taste one to see! Then add the raw onion and toss well.
1. Add all the rest of the ingredients and give a good toss with your hands (or tongs if you like). Serve with some toasted seeds for crunch!
The whole salad might have 100 grams of protein. Nobody eats that much in one sitting.

Why does it seem like everyone is obsessed with protein the last couple month? Such a weird trend. Everything in the store seems to be screaming about how much protein it has. Like… I’m good, fam.
