I am not sure if I can post a full recipe without violating copyright. I followed the recipe for herby cauliflower pitas from the cookbook Peaceful Kitchen (but did not use pitas).
In general terms, the salad is a mix of romaine, diced cherry tomatoes, lentils, and roasted cauliflower, then topped with homemade garlic tahini dressing, homemade zhoug, and quick pickled red onions. Batch cooked on Sunday, and it gave me four lunches. A bit less than $4 per meal.
