    Both are fine. Consider adding whatever that Japanese brown sauce is on top.

    Definitely prefer the bottom one. I don’t understand why people want to fry katsu to a crisp and then ruin the crispiness by soaking it in soft egg.

    The outer crust looks amazing and the whole dish looks really flavourful, but unfortunately the pork looks very dry.
