Loaded Tzatziki

Ingredients:
-1 cup plain Greek Yogurt
-Juice of ½ a lemon
-½ cup grated cucumber (about 3 baby cucumbers)
-2 cloves of garlic
-½ tsp salt
-1 tablespoon olive oil
-1 tablespoon fresh dill
-2 additional baby cucumbers (so 5 total)
-Roma tomato
-½ a red onion
-⅓ cup olives

Directions:

Grate 3 baby cucumbers. Wrap in a paper towel or cheese cloth and squeeze out the excess moisture.
Finely chop the dill.
Mince your garlic.
Combine yogurt, lemon juice, grated cucumber, garlic, salt, dill and olive oil in a bowl.
Dice remaining cucumbers, tomato, onion and olives.
Sprinkle on top of the tzatziki
