We Turkish people call these meals zeytinyağlılar — vegetables gently cooked in olive oil, served cold, and full of flavor.
Perfect for hot days and even better with fresh bread.

Yeşil Fasulye (Green Beans)
• 500 g fresh green beans, trimmed
• 1 onion, finely chopped
• 3 tomatoes, grated or finely chopped
• ½ cup olive oil
• 1 tsp salt
• 1 tsp sugar
• ½ cup hot water

Heat olive oil, sauté onions until soft, stir in tomatoes. Add green beans, salt, sugar, and water. Cover and simmer on low until tender. Cool before serving.

Sade Bulgur
• 1 cup bulgur
• 1 tbsp butter
• Hot water to cover
• 1 tsp salt

Melt butter, toast bulgur lightly, add hot water and salt. Cover, cook until absorbed, then rest.

Cacık
• 1 cucumber, finely chopped or grated
• 1 cup thick yogurt
• ½ cup cold water
• 1 clove garlic, crushed
• Salt to taste
• Dried mint (optional)

Mix and chill before serving.
