🥬🧀 Easy Greens & Cheese Filo Pie
Serves 6 | Prep under 30 mins | Bake 40 mins
Got leftover salad leaves, herbs, and random bits of cheese? Turn them into this golden, crispy filo pie. It’s forgiving, cheesy, and a total crowd-pleaser.
You’ll need:
Olive oil (lots)
1 onion, chopped
A couple of handfuls of chopped green veg (leek, celery, green pepper…)
Loads of leafy greens (kale, spinach, chard – mix & match)
Fresh herbs (coriander, parsley, dill, mint – whatever’s knocking about)
200g cheese (feta, cheddar, halloumi, ricotta – mix them up)
Zest of 1 lemon
2 eggs
250g filo pastry
Salt & pepper
How to make it:
Soften onion in oil, add green veg, cook gently.
Throw in the leafy greens – tougher ones first – and wilt down. Cool slightly, squeeze out excess liquid.
Mix greens with herbs, cheeses, lemon zest, seasoning, and eggs.
Brush filo sheets with oil, layer 3 sheets in an oiled baking dish (overlapping & overhanging).
Fill with veg mix, fold over the pastry, scrunch up the rest of the filo on top.
Bake at 200°C (180°C fan) for about 40 mins until golden and crisp.
Serve with a juicy tomato salad & crusty bread. Bliss.
