I was sold these seedlings as Scotch Bonnets but the more I look into it and the more I read here I believe they are Jamaican Mushroom peppers. That said as far as ingredient wise goes are they basically identical heat wise/ flavor wise in most people's experience? Do they go orange to red or is yellow the sign they are ready to pick ?

There are yellow and red variants. I intentionally grew the yellow ones last year and they have a beautiful yellow, with a slight orange tinge when ready to pick.
In my experience, they are nowhere near as hot as a bonnet or hab. They might be similar in terms of SHU, but something about the capsinoid profile on habs and bonnets somehow make the burn feel much more aggressive and sharp than many other peppers in that similar SHU range. My family and I had no problem de seeding the yellow mushrooms and cutting them in to throw in a salad. I don’t think they would have been able to handle doing so with a hab or bonnet.
That said, the flavour on these things is pretty nice, and has more sweetness to it than I expected. Mine last year basically tasted like a very thin walled (and spicy) yellow bell pepper of sorts. Not very floral at all, just sweet pepper flavour, with a kick.
They seem to get a lot of hate out here this year but I’m convinced it’s only because so many people are butthurt about getting “shroomed” and trying to find any reason to dislike the pepper based on their disappointment, and not the actual merits of the pepper itself. Is it the best pepper out there? No. But I was extremely happy with mine last year, and found them to be unique, and versatile.
