Mushroom and lentil bolognese, tofu ricotta, spinach, cauliflower, and homemade vegan mozzarella. Came out great!

    That looks beautiful. Great work! How long did it take you? All in all lasagna usually takes me a few hours using tofu ricotta, eggplant and zucchini, spinach.

    Vegan mozzarella cheese has come a loooooong way.

    I remember like almost a decade ago when I first tried it, tasted like cardboard.

    But now, it actually tastes good and the restaurant I go to has a delicious vegan cheese they use for their pizza and it’s a god send as my wife has a milk/dairy allergy and she can still get her pizza fix.
