This Lebanese Moussaka Is My Favorite Eggplant Recipe

Looking for an eggplant recipe that’s easy and full of flavor? Try Maghmour, also known as Lebanese Moussaka. This naturally vegan eggplant and chickpea stew is one of my favorite Middle Eastern dishes. Comforting, quick to make and perfect for a mid-week meal. Traditionally served as a cold appetizer, it also makes a wonderful main dish with rice.

📝 INGREDIENTS:
2 eggplants
150 g (1 cup) canned chickpeas
4 Roma tomatoes (or canned diced)
1 Tbsp tomato paste
2 onions
6 cloves garlic
1 tsp salt (extra for salting eggplant)
½ tsp pepper
½ tsp cumin powder (optional)
¼ tsp paprika powder (optional)
1 tsp dried mint
250 ml (1 cup) water
6 Tbsp olive oil to sauté garlic and onions
Sunflower oil to fry the eggplant
