Just wanted to share everything I got at Aldi for this upcoming week. We’re in Clearwater, FL and things can get pretty expensive around here, but Aldi always comes through! This is for myself & my husband and will last us all week.

Here’s what I plan to cook this week for meal preps:

  • Grilled lemon herb chicken over a creamy pasta with a side of roasted parmesan broccoli (meal prep)

  • Grilled pork chops with roasted potatoes for him & sweet potatoes for me, with a side of buttered zucchini. BBQ on the side for the pork chops (meal prep)

  • Fajita chicken & fajita veggies with tortillas, shredded cheese, and sour cream on the side to assemble when ready to eat (meal prep)

  • Sausage & cheese egg muffins (breakfast prep)

  • Apple cinnamon protein oatmeal muffins (breakfast prep)

  • Taco meat for a quick meal at home (we use it to make tacos, crunch wraps, nachos, or tostadas)

Obviously we have a lot of ingredients in our freezer/pantry for these meals already, so the groceries only show the produce & restock items we needed to get us through the week, and things like extra beef and chicken for the freezer, and the microwave rice for whenever we need it.

Just wanted to share a realistic restock for 2 on a budget. I work overnights as a home health nurse so I’m all about prepping for the week. My husband works 6-7 nights a week in electrical engineering so we stay pretty busy around here. I allow myself to take shortcuts to make prep a little easier, which is why I buy things like jarred pasta sauce and microwave rice. No shame in making meal prep less overwhelming!

    Have you considered buying regular rice, and meal prepping that? You can cook a bunch at once and then freeze in individual portions. That would save a lot of money!

    not bad

    but you should buy raw rice , for the price of your packets (8.38 you paid for 6 meals ) you will get at least 8 lbs (it should be I think around 80 servings ) . it doesn’t take long to cook it too.

    you can cook it in advance in leave in the fridge. my housemate used to microwave it too.

    just throwing the info right there!

    The packaged rice is fine. Sometimes the very cheapest option doesn’t work well in your life and that’s ok!

    Only thing I’m concerned about is that puffy chicken package, but it might just be the light.

    If you’re okay with the texture of ground turkey then the Aldi brand ground turkey in the freezer is usually ~1.99 a pound. I’m in south Florida and I usually do a pound of turkey and a pound of beef to help with leanness + price.

    I love Aldi . I shop there weekly. BUT I do not buy their meat.
