A classic Italian dish that I love making. The “caccia” in cacciatore means “hunt,” so I guess this is chicken hunter’s style. It’s been an Italian-American favorite for years and a dish with roots going back to the Renaissance. This dish is good made with a whole chicken, but I prefer it made with drum sticks and thighs only. It’s great with polenta or some pasta, but I love it with a chunk of crusty semolina bread.
