Today I’m making a refreshing vegetarian Turkish summer salad called Kısır 🥗.
It’s a light, healthy, and flavorful dish made with bulgur wheat, fresh herbs, vegetables, and a tangy dressing — perfect for hot summer days!

This recipe comes from one of my favorite cookbooks – Sebze by
Özlem Warren.

Ingredients
1. 350g fine cracked wheat (bulgur)
2. 1 tsp pul biber (pepper flakes)
3. 2 Tbsp tomato paste
4. 1 Tbsp red pepper paste
5. 1 medium onion
6. salt
7. pepper
8. 320 ml hot water
9. 2 Tbsp lemon juice
10. 2 Tbsp pomegranate molasses
11. 60 ml olive oil
12. 2 Tbsp spring onions
13. 3 medium tomatoes, finely chopped
14. 1 small bunch of parsley

Recipe
1. Add ingredients 1-7 in a bowl and mix thoroughly.
2. Add hot water and let sit for 10 minutes.
3. Add the rest of the ingredients and mix again.
