🥪 Easy Reuben Sandwich

Ingredients (for 2 sandwiches):

4 slices rye bread

4 slices corned beef (or pastrami)

2 slices Swiss cheese

1/2 cup sauerkraut, drained

2 tbsp Thousand Island or Russian dressing

1 tbsp butter (for grilling)

Instructions:

Assemble the Sandwiches:

Lay out the rye bread slices.

Spread dressing on each slice.

Layer corned beef, sauerkraut, and Swiss cheese on 2 slices.

Top with remaining bread slices, dressing side in.

Grill:

Butter the outsides of the sandwiches.

Heat a skillet over medium heat.

Cook sandwiches for 3–4 minutes per side, until golden brown and cheese is melted.

Serve:

Slice in half and serve warm with pickles or chips.
