Shrimp Pasta Salad
Here’s how I made it:
1. In a bowl, mix 2 diced cucumbers, 1 cup chopped cherry tomatoes, ½ cup roasted red peppers, ⅓ cup kalamata olives, ¼ cup marinated artichokes, and 3 tbsp sliced pepperoncini. Add a handful of chopped chives, ⅓ cup dill, and 4 oz crumbled feta.
2. For the dressing, shake up 6 tbsp olive oil, 2 tbsp lemon juice, 1 tsp Dijon, 1 tsp Greek seasoning, and s/p to taste.
3. Season 8 oz shrimp with 1 tbsp olive oil, 1½ tbsp Greek seasoning, salt and pepper. Cook in a pan with 1 tbsp olive oil for 1–1½ minutes per side until pink.
4. Boil 6 oz protein pasta in salted water for 4–4½ minutes, then rinse with cold water.
5.Add the pasta to the bowl, pour on the dressing, and toss everything together. Top with the shrimp and enjoy!

  2. It’s so stinking hot in VA too!!! I’ve been in the kitchen sweating all day trying to get some things made for the week. I made a delicious Caesar chicken pasta salad with my homegrown Roma tomatoes in it !! Now I’m making chicken stir fry for supper. There will be leftovers for a day too!! ALL of these ingredients are ones that I love. You are my go to channel all summer long! Actually I look forward to your recipes ALL year long. The salad that I thought I might not like as much is the Tuna Orzo but it’s the one I’m most excited to try bc I’ve never cooked with fresh tuna steaks. And you said it’s best with those! Do you think using Old Bay to season the tuna will be too much seasoning for this salad? Thank you so much for sharing these recipes! Seriously, you’re the best at what you do!

  7. Just came out of a heat warning was 98-120F With 16% humidity most days . Cooking is no fun when it’s this hot ,so it’s a lot of salad , grinder ,bean,chicken, egg, vegetable, fruit, tuna, pasta and so on . Filling refreshing and not boring!! Also I use my slow cooker a lot throughout the year .

  8. Cavenders is the Greek seasoning. I never make a salad without it. I love to sprinkle a little on before I add any dressing. Sometimes I don't even need any dressing

  10. Love all of these recipes, the first one you could add tuna instead of chicken. It has been hot in Ottawa but cooled down today thankfully. Some of you Americans say quarter cup and others like you say one fourth is there a divide in the country ( a bit like in the UK where I’m from,although living in Canada, there is a north south divide with accents and with what we call things)

  11. Layered Garden Pasta Salad

    Ingredients:

    1 (7 or 8 oz.) pkg. macaroni shells

    1/2 c. green onions, sliced with tops

    1/4 c. imitation bacon bits

    1 c. mayonnaise or salad dressing

    1/4 c. lemon juice

    3 tbsp. grated Parmesan cheese

    1 tsp. sugar

    1/2 tsp. garlic powder

    4 c. bite sized pieces salad greens

    1 med. zucchini, sliced

    1 c. sliced cauliflowerettes

    1 c. broccoli flowerettes

    2 med. tomatoes, cut into wedges

    Instructions:

    Cook macaroni as directed on package; drain. Rinse with cold water; drain. Stir together macaroni, onions and 2 tablespoons of imitation bacon bits into medium bowl. Mix mayonnaise, lemon juice, cheese, sugar and garlic powder. In 3-1/2 quart salad bowl, layer salad greens, macaroni mixture, zucchini, cauliflower, broccoli and tomatoes. Pour dressing evenly over top. Cover and refrigerate at least 2 hours. Sprinkle with 2 tablespoons imitation bacon bits just before serving. Refrigerate any remaining salad. 8 to 10 servings.

  12. The Barilla protein+ pasta is what I have used for about 2 years now. I have tried them all and nothing is as close to regular pasta as that one. It’s my favorite and I even prefer it to regular pasta. It is fantastic and such a healthier alternative and easy switch to make. It’s one of those small choices that make a big impact! Love these recipe ideas! I will definitely be using some!

  13. Those recipes look delicious! The only thing that I would change is the rotisserie chicken. As convenient and tasty as they are, I refuse to buy them. I like to roast several whole chickens, lots of herbs and spices, dice them up, and freeze in portions for recipes like this. I like to know where my chicken comes from, and I don't like it pumped up with more chemicals and to know that it was ready to expire and used for rotisserie. Sorry, but it's true. Either way we love your recipes and we can easily make it with ingredients that we choose.

  14. I made the antipasto salad. DELICIOUS!!! 🎉and I actually added some of the marinated artichoke juice from the jar to make the dressing. Really good!! 👍🏻
