This actually happened to me with a wood oven as well, I couldn’t wait and peeked in after not even fifteen minutes to find all loafs carbonized. Very disappointed and kind of angry at myself for not realizing the oven was way too hot but out of any better idea, I took one and proceeded to cut it open, right in the middle. The result was interesting, it had all layers of cooking from raw dough in the center to almost bluish carbonization on the crust. The other loaves I let bake longer. They were beautiful and also very good, I kind of had to peel the crust off like with a fresh coconut, cutting through the burnt part and giving a new polygon like shape. The burnt part will stick a bit to the knife, like it has some kind of greasy stick to it. Also, if you let it dry, only the inner part will dry, the crust being beyond dry, and will shrink a bit so you can manage to keep the burnt crust like some kind of shell if you manage not to break it in the process.
