🥢 PF Chang’s-Style Mongolian Beef with Broccoli

Ingredients (serves 4)
• 1 lb flank steak, thinly sliced against the grain
• 1/4 cup cornstarch
• 2 tbsp vegetable oil (plus more if needed)
• 3 cups broccoli florets (lightly blanched or steamed until crisp-tender)
• 4 cloves garlic, minced
• 1 tsp fresh ginger, minced
• 1/2 cup low-sodium soy sauce
• 1/2 cup brown sugar (packed)
• 1/4 cup water
• 2 green onions, cut into 2-inch strips
• 1/2 tsp red pepper flakes (optional)

Directions
1. Toss beef slices with cornstarch until evenly coated. Let sit 10 minutes.
2. In a small bowl, whisk soy sauce, brown sugar, and water. Set aside.
3. Heat oil in a wok or large skillet over medium-high. Sear beef in batches (don’t overcrowd) until browned, about 2–3 minutes. Remove and set aside.
4. Add a little more oil if needed, then sauté garlic and ginger until fragrant (30 seconds).
5. Pour in soy sauce mixture, bring to a simmer, and cook 2–3 minutes until slightly thickened.
6. Return beef and broccoli to the pan. Toss well and cook another 2 minutes until glazed.
7. Garnish with green onions and red pepper flakes. Serve over steamed rice.

🔥 Firecracker Shrimp

Ingredients (serves 4 as appetizer or 2 as main)
• 1 lb large shrimp, peeled & deveined (tails on if desired)
• 1/2 cup cornstarch
• 2 eggs, beaten
• 1 cup panko breadcrumbs
• Vegetable oil for frying

Firecracker Sauce
• 1/3 cup mayonnaise
• 3 tbsp sweet chili sauce
• 2 tbsp sriracha (adjust to taste)
• 1 tbsp honey
• 1 tbsp rice vinegar

Directions
1. Whisk sauce ingredients together in a bowl. Set aside.
2. Set up breading station: cornstarch, eggs, and panko in separate bowls. Dredge shrimp in cornstarch, dip in egg, then coat in panko.
3. Heat 1–2 inches of oil in a deep skillet to 350°F. Fry shrimp in batches until golden and crisp (2–3 minutes). Drain on paper towels.
4. Toss fried shrimp in firecracker sauce until coated, or drizzle sauce over just before serving.
5. Garnish with chopped green onions and sesame seeds. Serve immediately.
