Finally built up the nerve to do my first brisket after countless beef ribs. I was always pretty intimidated with trimming and the cook and worried the whole thing would come out dry. Chuds brisket trimming and pellet grill brisket videos really helped me out and made the whole process less intimidating.

The flat was a bit dry more towards the end(maybe due to not resting enough?), but the point was solid, good bend and not dried out.

-Seasoned with SPG
-Put in at 180 for the first 3 hours
-10 hours at 225 until IT hit 170
-Foil boat and turned up to 250 for another 4 hour until IT read 202-205 and probe tender.
-wrapped in foil and rested in a cooler with towels for 4 hours(had guest so I couldn’t rest it longer)
