Chef Francis Maling grew up in Queens, New York, though his family traces its roots back to Manila. A graduate of The Culinary Institute of America, he has worked in a variety of kitchens across NYC—from fine‑dining restaurants to community‑driven street food events. He is best known for his pop‑up food concept Bad For Business (BFB)—a rotating program of Filipino‑inspired menus that he often grills under the elevated 7‑Train tracks in Woodside, Queens. BFB blends community-focused BBQ, scratch‑made sauces, and nostalgic touches like banana‑ketchup and karaoke gatherings, all while being guided by social and personal convictions rather than corporate pressure. Chef Francis views BFB as a creative outlet and cultural mission—“Bad For Business” intentionally rejects traditional restaurant demands in favor of authenticity and happiness, signaling his desire to serve both food and community with purpose.

    Genuinely can’t wait to go to Roebling pizza (hope the salsa verde and black garlic comes back, that looked amazing) – but massive pass on all the Mikes Hot Honey. Looks like Roebling reopens later this week 👍

    Francis is the man! His banana ketchup is second to none, we’ve served it on oysters in the past, a super talented chef, this is gonna taste good.
