Creamy Sardine Pasta
Ingredients:
• 2 cans sardines in olive oil or tomato sauce
• 500g pasta
• 2-3 cups cherry tomatoes
• 2 tbsp Greek yogurt or cream (optional, for creaminess)
• 3 cloves Garlic
• Salt, pepper
•. chili flakes (optional)
• 4 tbsp. Extra Virgin Olive oil
• Spinach
How to cook:
1. Cook pasta, set aside.
2. In a pan, lightly sauté garlic in EVOO, then add cherry tomatoes (if using). Cook until it’s a little soft
3. Then add sardines (break them up a bit).
4. Add yogurt/cream if you want it creamy.
5. Toss in the pasta. Season with salt, pepper, chili flakes and mix well.
6. Add greens like spinach if you like.
