Spaghetti alla Puveriello, or Poor Man’s Spaghetti, was invented in Naples during the war when ingredients were in short supply. It’s nothing more than spaghetti mixed with a little bit of fried egg and some cheese. Traditionally the eggs were fried with lard but I know this is not easy to find so you can use a combination of butter and olive oil instead. Super simple but really delicious, this is another great cucina povera dish. And next time you’re making a carbonara and accidentally scramble your eggs, tell them you were making this instead!

  1. Growing up, my dad used to make us ‘spaghetti and egg’. Similar to this, except he’d beat the raw eggs in a jug, then add cooked spaghetti into a large hot frying pan, then pour over the beaten eggs and stir until they cooked, again similar appearance to this but our eggs were more spread out and smaller chunks.

    That was it, some salt, black pepper and honestly sounds like nothing but it’s a childhood dinner I remember fondly and I even cook it for myself as a now 24 year old man as a treat.

  3. This reminded me of the day I did a spaghetti aglio e olio and decided to put a fried egg on top. Super simple, cheap and delicious.
