Started trying sourdough about a month ago with basically no real prior baking experience. Took me 3 tries to get the starter working right. My loaves are coming out pretty good. Still refining my technique, but I'm satisfied.
Tried making pizza, and it tastes great, but I'm having trouble figuring out how thin to make the crust, what type of pan, whatever.
Anyway, I took a shot at croissants, and I think they came out fantastic. Took me 3 days to do the levain, to the Détempe, the butter seal, the turns, shaping, final proofing, and baking. What do you all think?
They taste great. Like sourdough (I guess I shouldn't be surprised), but sweet, buttery, and flakey like croissants. Sorry didn't take a picture of the tiny one I cut into for a test. Gonna give half of these to my buddy at his baby shower since I can't eat all these. Baking + intermittent fasting is a bad combo.

Here’s the recipe I followed.
One minor modification, I put some damp towels in my proofing chamber since we keep it pretty cool in my house, and our humidity is lower than ideal otherwise.
