This is my first time making a custard style ice cream! I used the vanilla ice cream base from King Arthur Baking, only instead of a tablespoon of vanilla I used 1 tsp of vanilla plus 3-4 tsp of taro/ube flavoring. Also added a pinch of salt.
After cooking the custard, I blended 1/3 cup of ube jam (halaya) with the same amount of custard until smooth and then mixed it all together, adding purple food coloring to get a more intense color. Strained it all and chilled/churned as usual, adding like 10-11 broken double stuf Oreos at the end. I’m glad I made the flavor strong because it definitely mellows out after the final freeze.
