Not new to smoking (pellet/komado) but this is the first time I’ve ever smoked anything on my kettle. It’s a 22” Performer and I used the Slow n Sear combined with a billows.

Spare ribs smoked with B&B briquettes and apple wood. 250deg for 2.5hrs, 275 wrapped for 1.5hrs, and 30 minutes in a foil boat at 275 degrees to set a light sauce glaze. Super happy with how these turned out.

Probably going to add a gasket to the lid to help with airflow but otherwise this went pretty smooth and I’m looking forward to smoking more on it!

    I was surprised by how well my kettle handled smoking once I figured out the vents and picked up a Slow n Sear too. I used to just grill burgers and steaks on it, but now it’s become my go-to for ribs and even brisket sometimes. The flavor is always on point! Adding a gasket made a noticeable difference for me, especially in holding steady temps for longer cooks.

    Ribs alway taste alittle better from a kettle. Good job on the cook.
