Primanti’s, to me at least, is a very good idea that suffers from poor execution. The proteins are always flavorful, and the Polish slaw adds nice acidity. Where the sandwiches fall down for me are in the fries and in the bread. The fries, in my experience, are always soggy and underseasoned, and the bread would be better if they buttered and griddled it on the side that comes into contact with the fillings.
Having gone to college in Pittsburgh and lived there for a time afterward, I’ve had my share of Primanti’s (both drunk and sober), so it occupies a special place in my heart and memory. I just have never been able to escape the conclusion that a few pretty simple improvements could make their sandwiches really special.

My family is from Pittsburgh so we always stop by the first location for a sandwich and an iron city. It’s a nostalgia thing for me. The chain locations don’t do it justice.

Just put the fries on the side. Fries piled up on a sandwich aren’t enhancing it, it’s just making it harder to eat.

This was the most disappointing thing I’ve ever eaten in my life. Lots of hype, I was passing through Pittsburgh and excited about it, and it was just average at best would never go there again.
