My first time doing this in my weber 22. Amazing results. Marinated a pork shoulder, cut into 1/4-1/2 " pcs for about 24hrs, cooked on the low grate with a chimney full of charcoal for about 5hrs at 350-40]*. Made tacos al pastor and some gringas, that my daughter devoured.
Will try a beef or chicken next time for a shawarma.

Marinade recipe?
Achiote Annatto Seed Seasoning – 1 tbsp
Guajillo chiles and Ancho chiles – 4 of each, rehydrated
Chipotle chile in adobo: 2 chiles, plus 2 teaspoons sauce from can
Pineapple juice: ¼ cup
Onion (half a yellow)
Vegetable oil: 1/4 cup
Garlic: 6
Cider Vinegar: ¼ cup
oregano: 1tsp
Cinnamon (pinch)
Cumin 1tsp
Pinch of salt and pepper.
Blended all together and coated the pork shoulder and into the fridge for about 24hrs. Next time I’d cut the pork thinner, 1/4″ thick would have been perfect.
