Decided to pour this tonight as it was likely near the end of its window – that was correct. Delicate on opening, but at least it hadn’t turned. After a couple of hours it started to shine, though was a bit restrained still – muted fruit and cedar coming through a bit more at this point. 92/100 Had it with American Wagyu filet, sous vide to 130 and seared with butter, garlic and herbs.
