The Griffin is one of the three pets in Grow a Garden that can be hatched from the Skyroot Chest.
Both the Griffin and the Skyroot Chest were released as part of Admin War update. And while you may be on a quest to collect all of the pets, with the Griffin, you’ll be able to have a consistent supply of the Cyclonic mutation which will help you sell your crops at even higher profits.

How to get the Griffin
To get the Griffin, you’ll need to get hold of a Skyroot Chest. The odds are quite low, with just a 1% chance of receiving the Griffin upon opening these chests.
To get your hands on one of these chests, you’ll need to craft it via one of the Giant’s recipes which you can access once the beanstalk has grown.

To craft a Skyroot Chest, you’ll need to collect two Beanstalks, a Sprout Seed Pack, a Sprout Egg, along with 7.5 million Sheckles.
Griffin traits
The primary focus of the Griffin’s trait is that it is a consistent source of the Cyclonic mutation, having a 10% chance to apply this to nearby fruits when it spawns a Cyclone every 60 minutes.
On top of this, it also advances the ability cooldown of nearby pets by 60 seconds, making it great not just for increasing the sale price of other crops via its mutation-focused bonus, but also as a support-based pet that will improve the efficiency of other pets too.
