One of my favorite vegan bakeries here in Portland was purchased and then essentially run into the ground, and the bakers (being amazing vegan entrepreneurs) started doing popups and are now opening a new bakery (Cat Scratch Bakery). These pastries are making me really excited for their triumphant return!
