My ultimate twist on a Caprese Salad. Crispy fried mozzarella balls meet fresh graded tomato and pesto for the ultimate upgrade.
Ingredients:
– 1 large ripe tomato
– 1 garlic clove
– 1 cup mini mozzarella balls
– 1 egg (beaten)
– 1/2cup flour
– 1/2 cup breadcrumbs
– Oil for frying
– 1/4 cup Pesto (recipe below)
– Sea salt, lemon zest, olive oil, fresh basil (for garnish)
Instructions:
1. Grate tomato and garlic into a bowl, drain excess liquid, and spread on a plate.
2. Pat mozzarella balls dry, coat in flour, then dip in beaten egg and panko breadcrumbs.
3. Heat oil and fry until golden (about 1-2 minutes). Drain on paper towel.
4. Add dollops of pesto to your plate, top with fried mozzarella, drizzle olive oil, sprinkle sea salt + lemon zest, and garnish with fresh basil.
Pesto Recipe:
– 1 bunch fresh basil
– 1 small garlic clove
-1/4 cup parmesan cheese (grated)
– 1/4 cup olive oil
– 1 tbsp lemon juice
– Handful of pine nuts
– Salt to taste
– And blend until smooth
