



Hello! Today I’m sharing my attempt at recreating a quick Subway-style bread, ready from start to finish in under 3 hours.
My recipe: 500 g flour (up to 555 g depending on the type of flour), 278 g water, 100 g milk, 8 g yeast, 24 g sugar, 18 g Fleischmann Bread Booster, 10 g salt, 31 g oil.
The Bread Booster helps extend the freshness, but it also takes away a lot of body, without a mold the bread ends up looking more like ciabatta. To fix that, I had this custom laser-cut mold and tested it for the first time this week-end.
Baking: 400°F for 15 minutes. Yield: 4 loaves of about 250 g each

Looks like a jimmy johns “French roll”
Watching with great interest. I need a softer roll for my meatball subs and something like subway’s bread would be ideal.
Go old school and V-cut the top of those when you make your sub.
Looks really good. How did you proof it?
Is there a version of this that doesn’t require any custom equipment? I’m intrigued to make this but the barrier to entry seems high.
Honestly my holy grail is a subway-esque roll, looks great
