2 tablespoon olive oil
1 small red onion thinly sliced
4 garlic cloves minced
1 tablespoon Red chili diced
2 cups cherry tomatoes sliced in half
1 cup chicken broth
2 white fish fillets weighing 1 kg when frozen
½ cup flour
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon garlic powder
Lemon squeeze

Instructions

Pat the fish dry and season with salt, pepper, and garlic powder. Preheat your airfryer to 400F. Dredge the fish pieces in flour then transfer to the airfryer basket. Brush with olive oil then airfry for 4-5 minutes until crispy and golden.(They don’t have to be cooked all the way through, as they will continue cooking later.)
Remove the fish from the airfryer and transfer to a plate. Add a tablespoon of olive oil to a pan over medium heat and add the onion, garlic, and chili peppers. Sauté for a few minutes until fragrant. Add the cherry tomatoes and cook for a few more minutes.
Add the chicken broth and bring to a simmer. Drop the heat to low cover. Cook for 10 minutes until the tomatoes are soft. Season with salt and pepper to taste.
Return the fish fillet to the pan and simmer for 5 more minutes or until the fish is cooked all the way through. Finish off with a squeeze of lemon. Garnish with parsley and serve!
