Why does the potato juice start turning such a violent red color in a slicer??
The camera takes away some of the redness but it really looks like it could be steak juices with how red it gets.

Anthocyanins, apparently. A water soluble pigment in the potato skins.

Im more confused about why this happened in the first place. If you’re making potato chips, there’s a another way.

Potatoes contain iron. As soon as the iron comes in contact with air it starts to rust. The other term is oxidation. So essentially is rusty potato juice

It could also be the reason that someone didn’t really clean the machine well before, and all the dried stuff is getting rehydrated
