baked tomato with couscous or quinoa
serves 4
4 large ripe tomatoes
1C. cook couscous or quinoa
1/2C. chopped kalmata olives
1/2C. crumbled feta cheese. ( or parmesan grated)
1/4C. Chopped parsley
2 Tbsp olive oil
1 tsp dried oregano
1 clove minced garlic
to taste salt and pepper
preheat oven to 375 degree cut the tops off the tomatoes and scoop out the pulp leaving a thick shell.
in a bowl , combine couscous, olives, feta, parsley, olive oil, oregano, garlic, salt and pepper.
stuff the tomato shells with the couscous mix. place in a baking dish and bake for 25-30 minutes or until tomatoes are tender. remove and enjoy.
kale salad:
in a bowl add:
1 Cup cherry tomatoes
1 Cup diced Cucumber
1/2 Cup thinly sliced purple onion
1/2 Cup feta cheese
mix gently all ingredients, in a small bowl add 3 Tbsp olive oil
2 Tbsp. lemon juice
salt and pepper to taste.
whisk well until emulsified and then
drizzle over kale salad, toss to evenly coat, set aside 10 minutes and serve.

I need to say something your channel was doing great and your views ,but when you mentioned homestead tessie and were honored ,you lost a lot of views .a lot of us opened our eyes and didnt want to wTch her channel no longer ,we looked around for another channel and came across yours which i love .but dont care to hear about her channel ,her husband and son dont wont work ,but yet she says almost they live the Amish ways ,no they dont ,she back peddling was over the top .I am No longer going to watch youtube i will uninstall.
