My dad always had a boxed cake ready for us when we got home from our first (and last!) days of school. I didn't think much about it at the time but now as an adult I've eally come to cherish the memory.

I've got my own kid now who unfortunately never got to meet his pops, but I'm gonna keep his memory alive with the same tradition. I did it last year too and see no reason to stop!

This one is the vanilla cake from Yossy Arefi's Snacking Cakes, and the frosting is chocolate swiss meringue buttercream from King Athur's Baking School cookbook. The preschooler asked for seconds. Well, thirds, but I had to cut him off somewhere.

    Love the story behind it and the cake looks great. Is the SMBC flavored with cocoa powder? Is it a mild chocolate flavor? I’ve only done vanilla SMBC thus far
