Last time I posted a taco de lengua here it got kind of controversial. I know some people really dislike when it’s served as a whole “slab” of tongue and say that’s nothing the “correct” way. But in the State of Mexico this is actually the most common way I’ve always had it. Some places do chop it up, sure, but this style is pretty traditional where I’m from. At the end of the day, I personally enjoy it — I even like the look of it — and honestly, it was so damn delicious that I wouldn’t care either way.
