Have been eating this salad for lunch and dinner for a week now and it is /so/ good – ingredients in the second picture

The airfried pumpkin is such a discovery, tastes like sweet potato but for 1/3 of the calories

Also added a cracker broken into pieces for crunch

So happy to also being "able" to eat avocado again!

Don't be afraid to use spices!! I airfry the cauliflower with a ton of curry powder
